New Beginnings: Day 2

Pomegranates, baby!!! The perfect cure for a sweet tooth (well, mine at least). Pomegranate are sweet, juicy and satisfying. There are many health benefits packed into this funny looking fruit, including antioxidant compounds.

This morning, I quartered a pomegranate and indulged in the sweetness of the seeds realizing they would taste great as a topping for oatmeal.

Getting Creative
With both pomegranate and creative juices flowing, I thought I might collect some pomegranate juice to save & use as a dressing for a greens salad later.

I topped my greens with tomatoes, green beans, raisins, one tablespoon of chia seeds, a dash of rice vinegar & pomegranate juice. At the very last moment, I decided to add a beet including the juice. Yummy!!! The combination of pomegranate & beet Juice mixed with a dash of rice vinegar made for a very satisfying dressing.
