Made my test batch of healthier homemade chocolate chip cookies. I substituted pulverized dates in place of sugar. They were a big hit with the family 👍:
Wanted to make the lentil Shephard pie for dinner but ran out of time – took my daughter to see Cinderella after school (very cute). Instead, I made a bowl of steamed mushrooms, spinach, carrots, cauliflower, flax seed, brown rice, red quinoa, black lentils and whole wheat pearled couscous:
Am grateful for my mom and thankful that she made it through surgery tonight. I am also grateful for the opportunity to help take care of her tomorrow while her husband is at his grandson’s party. It is not often that she let’s anyone fuss over her. It feels good to give back to someone always putting others first 💜
